Lemon Blossoms

Ingredients:
1 pkg. yellow cake mix
3 oz. package instant lemon pudding mix
4 eggs
3/4 cup vegtable oil
Glaze:
4 cups powdered sugar
1/3 cup fresh lemon juice
1 lemon, zested
3 Tbls. vegetable oil
3 tbls. water
Directions: Preheat over to 350 degrees
Spray miniature muffin tin with cooking spray. Combine cake mix, pudding mix, eggs and oil and blend well with mixer until smooth, abt 2 mins. Put small amount of batter, filling each muffin tin halfway (not more). Bake for 12 minutes. Remove from pan. To make the glaze, mix all glaze ingredients together until smooth. (Paula used her fingers) I stick a fork into the center of the muffin and then dip it into the glaze until covered. It will be runny so place on a wire rack with foil or waxed paper under to catch drippings. (Use the drippings if you need to). Let the glaze set thoroughly, abt 1 hr. before storing in containers with tight-fitting lid.
