2 c. boiling water
1 c. cold water
2 ½ c. sugar
3/4 c. cornstarch
1/8 t. salt
1 sm. Peach jello
1/4 c. lemon juice
Make a paste of cold water, sugar, cornstarch and salt. Pour into boiling water and mix well. Cook over medium heat until thick...about 3 minutes. Remove from heat, stir in jello until dissolved. Add the lemon juice. Stir well and let cool. Pour mixture over fresh peaches that have been cut up. (Approx. 12-14 peaches.)
Cream Cheese Filling
2 (8 oz.) Cream cheese
1 ½ c. powdered sugar
Mix well with beaters. Spread this on the bottom of 3 pie shells (Homemade or Graham). Pour peaches with filling over cream cheese filling. Chill overnight.
