1-1/2 lbs. lean ground beef
1 cup tomato juice
3/4 cup Quaker Oats
1 egg or 2 egg whites, slightly beaten
1/4 cup chopped onion
1/2 teaspoon salt (optional)
1/4 teaspoon black pepper
Heat oven to 350 degrees. Combine all ingredients; mix lightly but thoroughly. Press into 8 x 4-inch loaf pan; bake 1 hour. Drain; let stand 5 minutes. 8 servings

I LOVE this recipe. but instead of onion I throw in a just the dry powder from a onion soup package and it helps add yummy flavor.
